Q: Will this soak up water and dry? I need to stop water from rolling under my kitchen farm sink and down my cabinets. It would adhere to the underside.

Hello Nicole, Grippy Absorbent Mat is designed as an absorbent with an adhesive backing. The mat is not designed to be reused. When the saturation level approaches the mat edges, you will want to change out the mat. This will help to avoid liquid seeping out of the mat and under the Grippy backing.
